It is still good! . . .</span></p><p><span style="font-size: 16px;">1/2 pound bacon, fry and save drippings . . .</span></p><p><span style="font-size: 16px;">1 small onion, chopped . . .</span></p><p><span style="font-size: 16px;">1 cup maple syrup . . .</span></p><p><span style="font-size: 16px;">1 cup rice vinegar . . .</span></p><p><span style="font-size: 16px;">pinch of salt . . .</span></p><p><span style="font-size: 16px;">Hard boiled eggs . . .</span></p><p><span style="font-size: 16px;">Fresh strawberries . . .</span></p><p><span style="font-size: 16px;">1 pound spinach . . .</span></p><p><span style="font-size: 16px;"><span style="font-size: 18px;"><span style="font-size: 18px;"><span style="font-size: 16px;">Wash and dry spinach. Set aside. Crumble fried bacon. Set aside. Fry onion in bacon grease until soft&nbsp;. Add syrup, rice vinegar, and salt to bacon, onion and grease. Simmer only until combined. Arrange spinach in a bowl with strawberries, and egg slices. Drizzle with warm dressing and serve.</span></span></span></span></p>]]></description>

Garnish with clementine peel. Serves 2. This recipe was submitted by Rod Swerman to the WMSPA&nbsp; for the fifth edition cookbook.</p>]]></description>
